I love the diversity Belize offers. In one week you can: climb the steps of an ancient Maya pyramid rising above the jungle canopy; swim with nurse sharks (no frightening teeth) at Shark Ray Alley; relax on the beach; marvel at the 500 different bird species; discover Maya skeletons at ATM cave; and soak in the luxury at a boutique hotel.
On a jungle hike along the Monkey River, our guide reached into a termite nest and encouraged us to try this local delicacy. Wanting to protect my male ego, I followed my wife’s lead and made a surprising discovery – the termites tasted like mint!
Belize is filled with many wonderful mom & pop restaurants. I love seafood and highly recommend ordering fresh snapper and lobster. Conch Soup and Conch Ceviche (salsa using tomatoes, onions, cilantro, conch and lime) is also very tasty. No meal is complete without a bottle of Marie Sharp’s Hot Sauce and an ice cold Belikin beer.
On a trip to Costa Rica, I decided to exchange some money at a local bank. It seemed like a great opportunity to test out my high school Spanish skills. I walked up to the window and proudly proclaimed “I’d like some cojones, por favor.” For some reason, my request was greeted with uncontrollable laughter. I was dumbfounded until my brother-in-law politely pointed out “colones” would have been a more appropriate choice of words.
